Donkey: Oh, you both have layers? You know, not everyone likes onions. CAKE, everyone loves cake!

Shrek: I don’t care what everyone loves. Ogres are not like cakes.

Donkey: You know what everyone else likes? PARFAITS. You ever meet a person who you said, “Hey, let’s go get a parfait” and they say, “No, I don’t like no parfaits.” Parfaits are delicious!

Shrek: You dumb, diminutive, irritating beast of burden! Ogres are like onions, end of story. Bye, bye, see you later!

Donkey: Parfaits maybe the most delicious things on the whole damn planet!”

Donkey is a very wise ass.  This breakfast (or snack) parfait can help you lower your cholesterol, get your daily dose of calcium, pack a punch of antioxidants into your day, and eat 5 of the 10 things you should eat every day all in one go!

What you’ll need:
1) blueberries
2) yogurt
3) oats
4) flaxseeds (make sure they’re ground up or you don’t reap the health benefits!)
5) cinnamon

What to do:
1.  Soak the oats in a bit of water overnight.  I use a 1:1 ratio.  One tablespoon of water for one tablespoon of oats.
2.  Combine by layering oats, berries, yogurt.
3.  Add a spoon of the flaxseeds and sprinkle in some cinnamon.
4.  Enjoy the deliciousness!

Of course, variations on this are endless so you’ll never get bored of eating the same thing.  Change up the fruit, play around with yogurt flavours and mix it up by adding nuts or even a little bit of coconut shavings!

Note for those afraid of flaxseeds:  From my experience, they’re pretty much tasteless.  You can even mix them into orange juice and you won’t even notice they’re there.
